Some time ago, I did a post on Norma’s tostadas – a vegetarian tostada recipe from my friend Norma who is from Mexico. After that post, I received a message from a reader about these grilled zucchini and/or squash tacos. I asked her how to make them, and she shared it with me.  I made them, and they are DELICIOUS!

Now you can make them too:  (I used 2 squash and 1 zucchini.)

  • 1-2 zucchini, sliced or in small chunks
  • 1-2 yellow squash, sliced or in small chunks
  • 2 yellow onions, diced
  • Kosher salt and garlic powder
  • cilantro (I used the kind you buy chilled in a plastic tube.)
  • corn tortillas, warmed
  • shredded cheese (I used smoked chipotle white cheddar.)
  • tomato, chopped
  1. Grill the zucchini and/or squash on a George Foreman, or stove top cast iron grill, or in a basket rubbed with olive oil on your outdoor grill (I did this.)
  2. Sauté the onion with garlic powder, Kosher salt, and cilantro – all to taste.
  3. When zucchini and/or squash is done, put in a bowl and add the sautéed onion mixture. Sprinkle with a little more Kosher salt.
  4. Make tacos by filling with some of the zucchini/squash/onion mixture, then topping with tomatoes and cheese.
