A Mexican torta is a big sandwich on a sub type roll. In Spain this would be called a bocadillo (boh-kah-dee-yo). Â It usually contains a seasoned meat along with different toppings. This torta is filled with seasoned chicken, lettuce, tomato, queso fresco (white Mexican cheese that you crumble), and avocado. Â Here is how I made this torta:
- Sauté 1.25 lb. chicken in 2T Canola oil.
- Season chicken with 1 T chili powder, 1/2 t. cumin, 1/2 t. salt, and a dash of cayenne pepper.
- Chop the lettuce and tomato (or you can use salsa).
- Crumble the queso fresco. (It is called queso fresco in the package at the grocery store.)
- Slice the avocado (or you can use guacamole).
- If you like a little spice, add chopped jalapeños.
Build your torta like you see above.  It is ¡deliciosa!!
