
The holidays are a busy time, and I don’t know about you, but I really like to simplify my cooking now especially! Sloppy Joe is a quick, easy meal to make. So, I took my regular “American” recipe and added a Mexican flair to it. It actually turned out pretty well!
If you would like to give it a try, here is the recipe:
- 1/2 lb. ground beef or turkey
- 1 can (15oz) black beans (drained)
- 3 jalapeños (cored, seeded, and chopped, rinse if you don’t want it spicy) OR 1 green pepper (chopped)
- 1 small onion (chopped)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. cumin
- 2 T. chili powder
- 1 c. catsup/ketchup (however you like to spell it!)
- 1/2 c. water
Brown the ground beef or turkey and drain. Add the rest of the ingredients and simmer for 1/2 hour. That’s it!
Serve on hamburger buns with a salad or another side dish. Even add some crumbled “queso fresco” or sliced avocado to top your sandwiches, or melt some cheddar slices over the top!
